  • Prayer attributed to St. Basil: The earth is the Lord's and the fullness thereof. O God, enlarge within us the sense of fellowship with all living things, our brothers the animals to whom you gave the earth as their home in common with us. We remember with shame that in the past we have exercised the high dominion of man with ruthless cruelty so that the voice of the earth, which should have gone up to you in song, has been a groan of travail. May we realize that they live not for us alone but for themselves and for you and that they love the sweetness of life. In Christ’s name, Amen.
  • Prayer for the Animals attributed to St. Francis (with later additions):  God, Our Heavenly Father, You created the world to serve humanity's needs and to lead them to You. By our own fault we have lost the beautiful relationship which we once had with all your creation. Help us to see that by restoring our relationship with You we will also restore it with all Your creation. Give us the grace to see all animals as gifts from You and to treat them with respect for they are Your creation. We pray for all animals who are suffering as a result of our neglect. Excellent list of resources!
I also really like "After Noah" by Andrew Linzey and "Empty Cages" by Tom Regan.
On vegetarian nutrition "the China Study" by Colin T. Campbell is a real classic and Colin T. Campbell's latest book "Whole: rethinking the science of nutrition" is superb as well. "The Starch Solution" by John Mcdougall is excellent as well.
